A few noob questions

What kind of grease do I use on bulk head gaskets? Silicone grease? I can't remember what I used before.
What kind of roll-on paint to use for the back of the tank? Latex?

Yeah, silicone gel/grease works. Glass holes sells some - and most bulkhead kits should come with it on there. If you don't have any, I'm sure it will be fine without. I've installed many bulkheads without the grease, but it is just a little extra redundancy that can set your mind at ease.
Latex is good, any acrylic paint. Anything as long as it isn't oil based or mold and mildew resistant.

Oh, and I don't use roll-on paint, I usually use that cheap $1/can spray paint at Wally World.
