Adding Live Rock

When adding live rock to a new tank, does it have to be added all at once ? Or can you gradually add pieces as you see nice ones ?

You can certainly add it as you go...but, make sure it's "cured" live rock.
Adding "uncured" rock will produce an ammonia spike in your tank and it could be enough to kill any fish/corals in the tank.
