Ok i'm a dumby I've had my tank set up for 2 and a half weeks and I have been testing everything the the fish store said. Tonight my ammonia level has jumped to 1ppm What should I do?

you are in your cycle
do nothing
the ammonia will drop down,
nitrites will spike, then nitrates will spike
once all reads zero, your tank is cycled and you're ready for housekeeping

dont wait for the nitrates to zero out because they wont. as cowfish said, when the ammo and nitrites zero out, its maintenance time. do a 25% water change (to lower the nitrates) and ur good to go.
Good luck and welcome to the boards!

I disagree, nitrAtes will zero out with no live stock.
