rapidled has their own par38 bulb which is much cheaper and is probably as good. theyre all par 38 bulbs, it would just depend on the color combinations you want.
orphek is supposedly supposed to have 12 bulb par38 soon too

How high off the water should my bulb be in order to get the best spread?

best spread would depend on the lens. at 12" you can light a 24 x 24 area pretty well
Does that depend on its "spread" of light?
I saw that you can order them with a 40 or 80 degree spread. Does that mean, the 80degree has a wider spread than the 40? If so, is the intensity less?

yes, 80 degree would have wider spread and less par. while 40 would have more par but a more spotlight effect.
the great thing about the par38's is that you can always add another bulb if you feel you dont have enough light
