It might be regaining its health. If your lighting is good enough then the zooxanthellae back might simply be growing inside of it, that would be a good thing.
A white anemone usually means it is bleaching, that is not a good thing.

I agree with Thomas, your anemone was starved for light before you bought it. It is now slowly regaining the symbiotic algae in its tissue. Before long your anemone is likely to turn completely tan or peach in color. Good job!
