I am not a great photagrapher by any means, but here are some things that helped me.
- Use a tripod so that you do not have extra movement from your hands making your picture blurry.
- Most of the time I do not use a flash.
- For coral pictures and full tank shots I use the portrait mode on my point and shoot camera because this slows everything down enough to get a good picture.
- You will end up with a lot of bad pictures for every really good one that you get.
I really struggle with getting decent pictures of my fish as well. They just don't hold still long enough. I just have a crappy point and shoot camera as well which seems to take forever to focus so even when they do hold still by the time the camera takes the picture they are long gone.
Hopefully these help and, even more importantly, hopefully someone with much more knowledge of photography will give you some more hints.
