Oh frack!!! They are about 40 ppm!! I checked it last week and it was below 5.0...

We need ALL your parameters.
Ammonia, nitrite, nitrate, pH, alk, specific gravity. Nitrates are not doing this.
How long have you had them, and how did you acclimate? My guess this is acclimation shock. How old is your tank? Stars require mature tanks, and are very delicate.
If this is an established tank, it is likely a water quality issue as well.
