Changing the Tanks Sand

Alright so I have had my 24 gallon for 2 years and quite honestly I am not satisfied with this sand, it is all flakey nasty, and quite sure its fake. So, my LFS just relocated and changed all their 'shells' (their previous gravel substance) to live Fuji Sand. I seen it today, and it looked quite nice.
My question for making this topic is, Could I change my sand completely?, Would it be safe for the tank?, How would I do it?
My LFS said to take like 2 scoops of sand out everyday, then once its gone you can pour it all in.
Does anyone have any input on this matter??

In a small tank...I would put my critters in tubs, save as much of the water as possible in 5g jugs and swap out the old and replace the new. Most of the good bacteria is on the live rock and in the filter. It's a 1 day job. It is live sand...which has some bacteria on it.
