how many cleaning crew do you need for a 75 gal

For a 75, provided you have a fair amount of live rock (50lbs+), I'd suggest at least 40 blueleg hermits, and maybe 10 nassirus snails and a turbo snail or two.
You can also add a serpent star (risky for reefs) brittle star if you like.
Stay away from Conchs or Horseshoe crabs.

You can search livestock sites and there are several that suggest what to buy for what size tank. It's not ethlically correct for me to tell you exactly where because it goes against purchasing here from SWF.COM (which I highly reccommend over others), but what I am saying is other sites give you package options for your size tank. You can either buy in package/bulk and save $ from like 60$ and up, or buy singly from lfs or here at swf.com.
ALSO, from what I have been reading, you need to check the compatibility of your fish to the inverts. Otherwise you may have some really happy and well-fed fishies
