Distilled water is fine to use. Be sure to check the PH of your mixed saltwater before you add it to the tank. The same rule applies no matter what water you use. It has to mix for 24-48hrs and be sure to test the PH, temp and SG before adding it to the tank. If you have to add a buffer (which you should not, the salt should buffer it to where it needs to be) the buffer would have to mix for at least 24hrs as well.

I try to stay away from distilled water just because of the way its processed it bascially boiled till it turns to steam then cooled and collected in a seperate area.
to me to many things can go wrong with it so if I had a choice I would use RO/DI water.

Distilled water is pretty good, but it is not as pure as RODI. In our lab, where we grow cells in culture, only RODI is used. That said, distilled water is infinitely better than tap water for tank use, and probably only slightly less good than RODI for this use. As long as you keep to a regular water change regimen you will be successful, even with tap water. Use the distilled - it will be fine.

back in the days allot of distilleries used copper pots and collectors for the distillation process, now a days it's mostly stainless steel so it's acceptable to use it.

No..As SEP indicated, it is best to 'season' the salt mix you have added for 24-48 hours with a small powerhead and/or aerating it. Then test the specific gravity, temperature and pH before using it.
If all these parameters are OK, nothing else needs to be added
