If I got all new equipment for my 180 could I swap all the old stuff to a 90gal....overflow box, pump etc....or would it be too much flow?

Nope, you will be fine. Your retrun pump determines flow rate into the overflow. If you feel it too much, you can put a ball valve in the return line to control the return flow. It won't hurt the return pump to restrict it's flow on the outlet side.
