Feeding, how much is enough?

Hey everyone,
I'm confused about feeding requirements for my tank.
If you look in my signature, you'll see a list of my current tank inhabitants...
The reason I say I'm confused about feeding, is because some people say I overfeed, and some say I underfeed. I'd like to know what you all think.
Up until a couple of days ago, I would feed my tank 1/4 cube (or less) of Formula 2 in the morning, and a pinch of Nutrifin Marine flake in the evening. Nothing would ever make it down to the sand, and whatever did make it to the sand was quickly eaten by mr. green brittle star.
I've cut out the flake food for the past couple of nights since I've been told that I overfeed. Yet, my yellow tang still looks rather skinny and underfed.
I've had the tank now for 7 weeks. The previous owner slightly neglected the tank, and the yellow tang was quite skinny and had a mild case of fin rot when I got him. He no longer has the fin rot, but he's still kinda skinny.
Can anyone offer their comments? Please?

I don't think you're overfeeding. Since you said that hardly any food touches the substrate. You should feed as much as the fish can consume in a 3-5 minute time period.

u could also get a lettuce clip and clip a piece of seeweed selects to for the tangs it won't reach the bottom and prob won't pollute your tank put it in after u put the 1/4 cube in and then take it out before lights go out try it maybe once every 2-3 days my yellow won't touch it but i have heard it is a case of getting the right flavor all tangs are different

Your fish should only consume what is to be eaten between 3 to 5 minutes. I feed my fish a variety of foods, never the same for a whole week. Try using frozen mysis shrimp, Red Sea Zooplankton, fish flakes, freeze dried krill, freeze dried plankton, and of course some seaweed for a variety.
