I can only tell you what I would do.....All the critters you have are part of a CUC (clean up crew) they SHOULD have enough algae and wasted food to eat. The 5 peppermint shrimp, unless you have a ton of aptasia should get a half cube of Mysis shrimp every other day, until you add fish.
Nassarius snails will stir the sand bed and consume leftover food and fish poop as well. it is also a neat sight to see them emerge from the sand bed when they detect that you are feeding the fish.

Hi,
The color change is a natural normal thing in a new tank... it will go away on it's own. The CUC you have will devour any algae that crops up. You might add an algae sheet attached to a rock for them to eat. You should only get your CUC after algae appears... I know..."too late now"
GeriDoc is right, Nassarius snails will indeed stir the sand for you... but don't get them until you have some fish to poop and waste food.
