Hi, I am getting a 75 gal tank too, at this point I am planning on a yellow tang, 4 perc clowns, 3 cardinals, a royal gramma, and maybe, depending on how things go a dwarf angel of one kind or another. all of these fish are reef safe (except certain dwarf angels) so I choose them with keeping the ability to add a few corals in the future in mind. You of course have to add all your fish over a long period of time. Good luck

go slowwwwwwwwwwwww. i would do some research on what fish you like, find one to be a center piece fish (ie an angel or tang) and build up your tank around it with compatiable fish. put in the least aggressive fish first, then slowly add you other fish, weeks or even months later (esp if the fish need a mature tank) patience is key, believe me. hth and good luck with the new tank!
