just cut a piece off with a razor blade. get a piece of the "stalk" or base as well as the top.

I have always just cut a small piece off the top of the leather. Never cut the stalk. I have made 4 leathers out of my one toadstool so far...all are doing well.

I agree with teen that when doing "tree" style leathers healing time is faster with base tissue. on toadstools the under side of the head is "base" tissue. All base tissue is, is a part of the coral structured for support and adhesion, as opposed to polyp extension for feeding and light gathering. so when your cutting the head of a toadstool you are getting base tissue as well.
In other words your both right.
