Yes, freshwater dips can help. The water temp has to be regulated, and you can only leave the fish in the dip for a very short time. The stress could be more dangerous. You don't have a QT tank? If you're going to do dips, I think using water from your tank in a small container with medication in the water would be a much safer route.
One of the sharks could probably give you more information.

Im no expert. I can only write from experience. Ive had to dip my Tang twice in almost a year. Both times I felt extremely guilty afterwards. :( The last time he looked real bad and was on death's door. The Ick covered most of his body including his eyes. Hes fine now and I invested in a cleaner shrimp. Money well spent. I would not recommend dips unless you think the fish will die. Also make sure the fish is hardy enough to snap out of the shock. For the record the fish was the only one with ick in my tank. I have no idea why.

Freshwater dips of a minimum of 2 minutes will irradicate the parasite from the fish. Obviously it does nothing for the tank where the ich is. When giving a freshwater dip, temp has to be the same as the tank, dechrolinated. Keep the fish in the net you catch him in to prevent having to catch him again (stress). Keep a very close eye on the fish during the dip. The fish may go flatside up, jiggle with your finger and watch his gills. I have used this process many of times and usually time according to the signs of the particular fish. From as short as a minute to as long as 4 minutes. Depends on the fish.
After the dip put the fish in the QT tank with antibiotics to aid the healing process of the little holes you just left in his flesh where the parasites were.

Freshwater dips will not cure ich as someone mentioned before.
Freshwater dips will kill the ich parasite which the host fish has encapsulated just under the skin. As the parasite can't survive in freshwater.
As for a speedy cure all, there is no such monster available for the treatment of ich. There are as many treatment preferences for ich as their are posters on this site. Each has its benefits. One has to develope a program which will work the best for him.
Ich is a parasite which capitalizes on the lowered immune systems of the fish. Many things will cause a fish to have lower immune systems, more notably is stress. As with most things in the aquarium hobby, prevention is the best route to take.
