how high above the water do halides have to be? I just picked up a retro 250w hamilton but my canopy is only about 6-8" high.

i definitely don't have that much room... can i put a piece of acryllic over the tank? there will still be open space just not directly under the light

my rock doesn't go all the way to the top of my tank so coral bleaching shouldn't be a problem I wouldn't think.

Agreed, especially if the lamps aren't shielded by a piece of glass - like in a retro.
The envelope of the lamp can easily get so hot that water splashing on them can cause it to shatter. Not worth the risk IMO.
