Anybody ever try freezing a choc or linkia star and just cutting portions off and feeding it to their harlequin shrimp? Curious if they would take "frozen star food"

Yep, people have done this.
People also have kept a supply of Chocolate Chips in a sump or something and cut off living pieces allowing the stars to regenerate.
But by far the easiest and most cost effective is using Asterina stars. Very easy to "farm" and quite sustainable.
