Yes, I have done it a few times with 100% success every time. I usually buy used tanks that are already set up and put them all around my house... but I've recently sold a lot of them.
Anyway, I buy a tank every now and then that has cc (crushed coral) in it and I hate it every time. No one ever takes care of cc, and rightfully so, because it is a terrible means of substrate.
What I've done in the past:
Put all the livestock/corals in a bin filled with tank water and put in a heater and powerhead to keep them comfortable. Put all live rock in bins filled with tank water (they won't die off if they're without heat or water movement, just make sure it's not 60 degrees in your house - and be sure they're fully submerged). Remove all the remaining tank water but keep it. Get rid of all the cc - just throw it out. Put the live rock back and add the live sand around the rock. Add tank water. Wait until it heats up and replace the livestock/corals.
Again, I've done this exact thing twice and I've not had any spike... no ammonia, nothing.

Agree with Nick above. I changed out the CC in my 55 gal tank and I am so happy that I did it! In my case, I didn't remove and save the water, except what was needed to cover up my LR and corals/fish that I put in a bunch of 5 gal buckets w/small powerheads and heaters.
I actually left about half of my LR in the tank and then removed the CC. The water of course got very dirty and cloudy but anticipating this, I had 6 new and clean filters for my Magnum 350. I ended up going through all of them in short order, the water got clean in a couple of hours and I then restocked the tank. Didn't lose anything-corals or fish. By the next day, the water was crystal clear and everybody was happy.
I just got regular white aquarium sand and after rinsing it thoroughly 3 times (be sure to do this before you do the changeout so that everything is ready) just put it in the tank after all the CC was out.
