Help with high nitrate levels

Ive had my salt water tank up and running for 3 years and never really had any problems except phophate levels. I ran out of my nitrate test kit and let it go for 3 months figuring nothing was out of the mix. I purchase a new kit and found my nitrate level to be over 100 ppm. Im currently running a hangon the back wet/dry with ammonia debris trap. The big emperor and a prism deluxe protein skimmer. There is no sign of ammonia or nitrite and phosphates are still there but im running phosban 2 months on 1 month off. In the wet/dry i run chemipure and i was told to only run carbon if there is a sign of the color going a little brown. Salinite is 1.020.
Sorry about it being all mumble jumble but figured i would fill you in all what im doing on my end and see if i could get some help.
P.S. its a 90 gallon with 2 fish a 9" dogface puffer and 5" yellow tang. 75 lbs live rock and crush coral bed.
Thanks for the help
