With the addition of hermit crabs to a tank, should one also place empty shells.....? How much do the hermits grow? Don't they hunt for new shells once they outgrow their existing?

Yes, Yes, and Yes. Depends on the hermit. Some need turbo snail shells eventually, some need large cerith snail shells eventually. Some need full size conch shells eventually....
