Here are a few things that make great horse hitches. I will be adding to this as I think of them
photosynthetic gorgonias such as
purple sea whips (octocorallia),
yellow/green sea whips, (Pteroogorgia citrina) and
Purple Gorgonias (Muriceopsis flavida)
Tree sponges (Genus Ptilocaulis)
Sea grasses
Manatee Grass, (Syringodium filiforme),
Turtle grass (Thalassia testudinum)
Shoal grass (Halodule wrightii)
Oar grass, (Halophila decipiens),

There are more, but I will have to research them.
Now for the fake stuff.
There are several several nice fake plants, corals and gorgonias - just be sure they dont have rough or sharp edges.
Branch rock is also nice but hard to find these days.

Living color makes several sponges that seem to be awesome for seahorses. they have replica gorgonians, sea whips, pipe sponges, and harp sponges that seahorses seem to like.
They are not real but have great color and feel like the real thing.
