My setup is fool proof unless gravity stops working, If I shut off the the sump pump, only one comparment drains into the main tank, and the rest just sits there and waits, check out my DIY, sump/refuge design on my homepage.

I don't use a safety switch on my sumps, but see no reason why you shouldn't/couldn't install one.
Redundant switches are quite normal in most industrial applications, where you want to prevent failure to an entire system.
A sump is basically just a small level application, and a low/high level alarm or pump shut off switch would be considered appropriate if you want to install one.

I'm with jedimaster. It would be just one more thing to clean. If you forget and salt creep makes it stick it will be of no use. IMO get an overflow that won't bread sypon and then you will have nothing to worry about.
