Your almost there. Nitrites can come down quite quick. If you used live sand and cured rock your cycle should be quite short.
For example I just did some moving around of my system. I added mature rock and a few hands full of sand from the established tank to the new tank in the different room. Ammonia took about 7 days to go to zero. Nitrites then began reading in the .25 range for a couple of days. On the third I tested in the morning and still .25, after work, a mere 8 hours later they were testing zero.
I did however do water changes on the established system and used the old water to add to the new system. I also dosed the new system with amquel and added a Damsel to provide a consistent ammonia source for cycling the tank.
To make a already long story short. My guess is your just a few days from being cycled.
