July 4th... Who's 'cueing and what are you making?

Ahh, BBQ season... Nothing better than a National Holiday to crank out some great BBQ
I've got about 15 people coming over. One of my buddies is bringing the pulled pork. I've got 4 racks of baby backs that I plan on smoking for about 4 hours.
In addition to the ribs and pulled pork we've also got my smoked baked beans, homemade grilled jalapeno poppers that I'm trying for the first time this year and sesameginger chicken wings. Also doing a grilled pineapple salsa and homemade cole slaw to go with the pulled pork.
What are all you other 'cue-heads doing?

Doing a mixture of cream cheese and cheddar with some chopped green onion. Been debating on the bacon wrapping. Most likely gonna do it since bacon makes everything better.

YUM! can I come over?!?

We're doing smoked chickenand beef ribs (lots of friends that don't eat pork) also, it's our tradition to do a lobster/seafood bake for July 4th. And I make a killer potato salad!

Nice! Forgot to add that I am making a creamy chipotle and cliantro dipping sauce for the poppers.

Pork shoulder for pulled pork sammy's and slaw with a home-made Carolina style vinegar and mustard based BBQ sauce. Plenty of cold home-brews to go with.

gross, bbq isn't supposed to be tart. It is all in the cracked pepper, (or molasses and brown sugar). I'm gonna bust out the grill, but it is gonna be a surf and turf. No BBQ this time. Found this great meat market, and they have out of this world steak. And gonna go down and pick up some shrimp from the shrimp boats, found a guy who'll sell me a pound of shrimp for 7 bucks and the shrimp are the side of lobsters (well exaggeration but 5 is a meal no lie) It is gonna be epic.

LOL, I guess it is a matter of taste, I really don't like molasses in anything. How about some baby back ribs with coconut milk and ginger marinade?

I'm not a huge fan of ginger. It has its place. Sushi mainly, then occasionally on some fish.
But I'll bet you some pork ribs with coconut milk and pineapple might be fun for an luau. But you don't like sweet BBQ? That stuff is tasty.

My wife loves the sweet BBQ, but I prefer the tangyspicy of Carolina style. I'll just have to make 2 sauces...

Neext weekend doing a pork Shoulder along with the Usual fixings. Mine takes about 12-14 hours with a dry rub then a Kansas City style sauce After it is pulled apart. My Neighbors are like When is it going to be ready ALREADY.

IMO (and this isn't just me pulling peoples chain) all BBQ sauces, well most of them have some sort of vinegar in it. What those Tennessee, Carolina, Virginia people do, where buying BBQ sauce means buying a gallon of apple cider vinegar, well that is good too. But it deserves it own name, because it is just such a different flavor than what we texans call BBQ.
When my wife's family bbq's all they do is set the chicken in some vinegar for 30 minutes. Then grill the chicken, then they tear the chicken apart. They have some prepared "BBQ sauce" which is some butter apple cider vinegar and some red pepper which they simmer. Then they put it all in a pan, and let it sit again. Then they serve the chicken which by this time gets up and slaps you with that tart and spicy.
It is delicious don't get me wrong, it just isn't BBQ. Just like grilling a ribeye steak with olive oil isn't BBQ...

I am just getting over a bout with what I think was food poisoning. I ate a piece of toast yesterday

Just picked up a Bradley smoker and was going to do something tomorrow to break it in but I don't think that's going to happen.
I will say that BBQ is like s3x, when it's good it's great and when it's bad it's still pretty good. I don't like the overly tangy BBQ but it does need a little bite. Got a great book of recipes, Peace, Love and BBQ. Can't wait to be able to try some of the dishes in there.
