No need to take out the rocks.. You haven't added any sand yet??
Well if you are going to add sand to the tank, you will need to either add Live Sand, or dead sand and wait a while for a possible min-cycle to occur over again... It's always best to addd the sandbed and rocks DURING a cycle.. Unless there is a new method that came across this board that I missed out on...
DOn't clean anything, don't siphon any detritus.. Let it all be. I would purchase a good amount of Southdown sand, and then seed it with live sand.. You may get another spike and get a little mini-cycle.. but it shouldn't take long...
Good luck!

I agree on the detritus . . . leave it in there for the clean up crew when they get there.
What kind of set up are you running? I know you said 120, but what about a sump or fuge? If you plan on setting up a refugium then I wouldnt worry about adding sand to the display. It will be easier to achieve the same effect if you put your DSB in a remote refugium. IMO anyway. I like the look of bare bottom tanks. Plus you can swap out your entire sand bed and not disturb the display should the need ever arise.
As for a water change . . . well, I never did one after my cycle, but I would guess that you would want something in the order of 10-15%.

Why are you worried about detrius? Is there a lot of dead material on your rocks? Most live rocks have a lot of the dead stuff already pre-cleaned before they are shipped in the first place. Do you see big chunks of dead stuff? Or just the normal algea and coraline?? Unless there is a lot of thick dead junk on them leave them alone. What ever you do, only clean them with salt water.
