I'm probably losing over a gallon of water to evaporation a day. I have a 58 gallon with a sump and fuge underneath. Would it be ok to put an acrylic top on the display tank to stop some of the evaporation from there? I think I'll get enough gas exchange between the sump and fuge.

A lid will decrease evaporative losses. You could also put one over your sump and fuge (e.g. cover 90% of it with plastic wrap). This will also prevent fish from jumping out of the tank.
You would have to seal it very tightly to affect gas exchange.
The major downside of a lid is that it will cut down some of the light to your tank.

You could look into getting a drip machine. They sell old ones that were used in the hospitals as well, and you can set them to drip a gallon or so a day. That way you can just keep a 5 gallon bucket or so near your tank, and the machine will keep your water level even over the next 5 days.
Just an idea, I am going to get one soon so I dont have to top off my water everyday.

i lose anywhere from a half gallon to a gallon a day. i make new ro/di everyday for my top offs.
