Are they good or bad? I've heard so much about certain stars eating all the good stuff in the sand so i'm wondering about these. If they are good how many should i get for a 55 with about a 4 in sand bed?

Besides what you mentioned, stars are very hard to keep. They're very prone to water chemistry and temp. fluctuations.
There are people who have no problems with them, but IMO I'd stay away from them. :D

SOME stars are hard to keep. If you have any corals or anything slow moving DO NOT get a Choco Chip Star. They are nice to have but they will devour anything they can get on top of. I found out the hard way....
