How many cannisters on the RO? Does it have to be plumbed in or simply screwed onto a faucet?

2 canisters. I membrane, 1 charcoal I believe.
It has a hose connection on it. But this would be able to be swapped out for however you want to set it up.

What kind of UV is it? How many watts? How old is the bulb?

I believe it's a Jebo - 9w. Bulb is probably a year or so old, but it was probably only used for a few months.
