What is encrusting montipora? Is it like a coralline algae in the fact that it just spreads over the surface that it is placed on?
Cap Montipora? Is that those cup like corals that look really sweet?
Why are there so many different types of Montipora?

LOL! I guess I'm confused on why so many different corals are lumped together as montipora.
Montipora is a genus that has many different species. Same as Centropyge is a genus for the dwarf angelfish and there are a ton of them. The reason you often don't see them identified at the species level is likely because this can be extremely difficult - sometimes taking dissection to be sure.
