I have some mushrooms that ive had a few months and for the past few days they open not flat but make somewhat of a vase shape. Water is fine in terms of chemistry. Does this behavior indicate a problem?

You can keep shrooms under normal lights I am 99% sure. Mine do this on occasion. No big deal really. Shrooms are very very hardy

Mine do this as well! It really doesn't indicate any problems!
I think that they are just stretching out!

Haze, many corals will give little hints that something has changed or is wrong. Many soft corals (including mushrooms) will react to reduced lighting by expanding their surface area and/or reaching light. Kip and Mike are absolutely correct that this could be something worth looking at if it continues. Lights do wear out and as they do the spectrum and intensity changes. It's hard for a person to notice - but your corals do. It's good that your paying attention to them, they'll tell you how their doing as long as you don't ignore the signs.

Like I said. It very well could be nothing at all. My mushrooms are big sometimes and smaller sometimes. Sometimes they stretch out others they stay a little more closed up. Nothing wrong with them.

Have you moved your powerheads lately. Even a tiny little change in current can do this. If everything else is still fine you might want to try a little bit of a current change ( or change it back) and see if they don't get better. I've accidentally knocked my powerhead a tiny bit and had this happen. Just an idea.
