my emerald crabs are no long emerald

hey guys, just was wondering why my emerald crabs would be loosing their color.. they are turning into a pale green, if not white.. they are eating, and only have two in my 55 gallon. all the peramiters *SP* are ideal or good.. any ideas? any special food they are sopposed to eat?

I have had that problem before, but I have not idea why. I can never keep emeralds for more than a year, so I stopped buying them.
