Which Hydor Koralia pump would best suit a regular 75 gal reef aquarium?

Depends what you want to keep. If your doing a mix reef. 2-4 #3 or 4s

I was thinking 3's or 4's. Is there a huge difference between 850 and 1200 gph that would handicap what I could put in it?

If it's a 75g reef and nothing else is creating water movement, then use atleast two #4s. I use a #3 and a #4, but I also have two other smaller powerheads, a canister filter, plus the return from the sump pump.
