New Tank With Assassi Triggerfish! Help!

I have a new 75 gallon tank, that I cycled with cycled water from another tank, live sand, and live rock. My tank has been running 1 month and the water quality is perfect. Ammonia, nitrite - all zero.
I purchased a 5 inch Assassi Trigger, and threw a 2 inch domino damsel in there. They seem to get along fine. But heres what worries me....
I feed my assassi trigger, 2 baby raw shrimp a day (one in the morning and one at night)
He eats the shrimp, chews it, and spits it back out and it goes all over the place. He then eats some of the chewed pieces, but a lot of it is scattered all in my water. The domino helps clean up a little, but theres just too much shrimp all over the place. Is this normal behavior for a trigger? I'm also worried that this will pollute my water quality. Will it?
Also at night my trigger floats to the very top left corner of my tank and sleeps side ways. Is this normal for a trigger to sleep like this?
Its funny to because I can see his eyes moving, so I know, he knows, I'm watching him.
Any help would be greatly appreciated. :)

well..will all the tiny pieces of shrimp pollute my water to the point where he will die or will it be fine? I heard meaty products pollute your water like crazy, is this true? Should I do a water change every couple of days? Should I throw in 8 blue legged hermits to help clean up? What should I do? My trigger makes an absolute mess.
ANY advice would be appreciated!
thanks
(P.S.) are assassi triggers very aggressive? mine doesnt seem to be, I thought he would eat my damsel but he totally leaves him alone. he seems peaceful.
has anyone ever owned an assassi trigger? <img src="graemlins//confused.gif" border="0" alt="[confused]" />
