Novice with 29 gal biocube

I began set up of a 29 gallon reef 5 days ago. 30 lb. LR, about 1 inch live sand. Had absolutely no ammonia, nitrite or nitrate from day one (the owner predicted this would happen with his high quality LR). He supplied the water also. Going back for 10-15 lbs. LR on Sat. Have an order from SWF.com coming tomorrow for CUC: 20 hermits, 10 astra snails, 1 porcelain crab, 2 brittle stars, 5 pepermint shrimp, 1 sand sifting cucumber.
No skimmer yet.
New to saltwater. I know to take it very slow. Not planning on fish for another month or so, and then one at a time. Easy stuff... firefish, pair of stubby clowns. Will send pics soon. I have read everything I can find but I feel impending doom! This looks so easy to

My question is what to feed the CUC? Some of them (the shrimp, the porcelain crab) might not make it on the stuff growing on the LR alone.

I haven't removed mine yet but i will be after my tank is cycled. I plan on just putting the skimmer where the bio-balls used to be!
