Can someone provide some information about these fish like do they need a very mature tank to live in, lots of live rock, what do they eat, are they aggressive, and what is their care level. Pics would also be great.

do they need a very mature tank to live in: A six month or older is fine
lots of live rock: They love to explore, very active..so yes, for their overall wellbeing
what do they eat: Pellet, frozen mysis, a tiny bit of Formula2 now and then, I'm sure pods if they are available
are they aggressive: Not at all, in my experience
and what is their care level: Easy. Very social, active and entertaining.
COVER your tank.
Pics would also be great.

I have recently read that wrasses like to pick on inverts. Does anyone know if this wrasse has a reputation of doing that?

Yes and then again, yes.
The one in the picture posted above (though just the smaller hermits). This particular wrasse will only grow to about 4".

I was thinking about getting a few cleaner shrimp and possibly a few harlequin shrimp. Will these be in trouble with this wrasse?

I have never kept shrimp, so I couldn't say for sure..
The wrasse family are carnivorous. The meals they take, I believe, depend on their size compared to the possible prey. That's just an assumption, though.
