depends on your other critters but I would say no harm in adding up to a dozen or so.
Peppermints dont get huge but they are sizable when in number as adults. About 2.5 inch or so so Easy to go to town when they are little, but you dont want a tankfull of JUST peppermints.

cool deal i just have 5 now and sometimes i go a little crazy when i like the way things interact. But right now i have about 140lbs of live rock 6 emerald crabs i bought and some little ones i don't know where they came from about a 100 or so hermits and 4 damsels, sailfin; arrowcrab, decorator crab, coral beauty, hippo, clown goby, citron goby, several corals, fox face, i have a beautfiul very active tank right now and everything has been in and good for about 6 months and i am now adding the corals
the tank itself has been up and running for about 4 years but i descided to take all of my fish out and trade in at LFS and start over bc all i could have were the 5 aggresive fish
