What type of tank are you going to have? A reef tank with fish and corals? A fish only tank?
For a fish only tank you will need about 720 gallons flowing through your tank per hour.
For a reef tank you will need 1,440 to 1,800 gallons per hour flowing through your tank.
Sooo, lets say that you only have 300gph powerheads in your area. You will need at least 5 of them for a reef tank and at least two or three of them for a fish only tank.
The protein skimmer is pretty much mandatory.

and the powerheads, is it better to have multiple of one big one?

It is definately better to have multiple smaller ones as they do a better job of circulating the water in multiple directions. You can have one big one with a spray bar as well, but you will have to research how to set one up (I have no idea how).
A good tip is to either paint the back of your tank black, or put a black background on it. You then buy black powerheads and they are hidden really well that way. The black also makes your tank look bigger

mudplayer...is this 720 gph number include the circulation through the sump on a wet/dry? In other words...my pump is rated at 780 gph and I have one powerhead rated at 300 gph. Am I at a total of 1080 gph?

Yes, you will count your sump flow. Basically, count anything that has a return that pumps water into your main tank.
