Proper water levels

How Do I Go About Keeping these at the proper level?
Meaning when they go up, how to bring them down or when they go down, how to bring them back up???
pH - 8.2

nitrate - under 20-30 for fish only, under 10-20 for a reef. Preferably, if possible, 0.

Water levels are easier than you think to keep up with. Like MR X said, regularly schedules water changes will replenish any trace elements used up by your tank. It's also important to use RO or RODI water, quality salt mix, and not to over feed. Do this and you should be good.
