puffer out of water

I was just reading on here about how it is bad to take a porcupine pufer out of water for even a second. Why is it so bad to take them out even for that short amount of time? :notsure:

And thats why my LFS puts the bag in the water and puts the puffer while the bag is in water so taht he is remaining in water at all times.
