reef safe wrasse and crush coral substrate

I read that that some bury themselves and prefer sand substrate. Is that a general rule for all the reef safe wrasses or are there any that would do fine in crush coral/more course substrate? I like the fairy wrasses and have alot of rock.
Another question..I had a 4 inch copper band butterfly vanish after after 3 weeks in the tank. first 3 or 4 days yellow tang was beating it up. but things settled down. I have a serpet and bristtle star and a fat snow flake eel. I have read on the forum a serphant star will eat a fish. I assume the eel ate him. I blamed him anyway and sold him to the lfs. I will admit I was out town and the fish went a day without food. came back no trace of the cbb.
also have a 5 "blue hippo, 4"yellow tang, 6"foxface, fire angle, 2 false o clowns, serpant anbritle star, several crabs and an eel at the time. In a 155 gallon tank.
last question with the eel gone am I still pushing being overstocked? I have plans to upgrade to a 300 gallon within a year. would like a few like a wrasse and add some small fish/ psuedochromis,chromies, cardinal with the eel gone but dont want to put them in stressful enviroment.
