Just thought I would share this info with you:
We have 2 SW Tanks at my house, My dads 45 gallon bow front, and my 100 gallon. Mine was having problems keeping snails alive, so when it appeared as if my emerald crab wasnt doing so well, We acclimated him into my dads tank, in hopes he would live.
Well he did live. He also Killed. It was somewhat funny to watch. My dad had about a 4 to 5 inch sweetlips in that tank. Everytime the sweetlips would go over a rock that the emerald crab was on, The crab would put his claws straight up in the air, trying to grab the sweet lips. HAd he latched on, that sweet lips would have dragged him all over the tank.
Anyways Dad also had a serpant star, again a good size, apx 6 to 7 inches across from leg to leg. We thought nothing of it when one of his arms were missing, because we hear they grow back. Look in the tank the next day, and the poor serpants arms were all missing. The weird thing was the were still Moving when we found them! Looked at the main body, and sure enough, there was that emerald crab picking at the body.
Dad was very pissed. He reached in with his hand, grabbed the emerald crab, and ran downstairs and threw him back in my tank(without acclimating) Cussing the whole way as well. I had bought a good size blood shrimp while the crab was in his tank, and I am thinking the stupid crab killed it as well. I just deal with it though, because in my opinion whoever is the bad A@@ of the tank deserves to be there.
Now if he takes down my 5" Naso Tang, Then Im gonna have to take action!! But we shall see!

While Emerald crabs can be quite nasty when they get bigger (I know. I had a red one mame my Blue Tang), stars lose legs when they are stressed from a variety of reasons, ranging from poor water quality to starvation.
I'm not saying the crab didn't amputate the legs, because it certainly could have. But it also could have seen an easy meal and come over to dine. You may have caught him just at that time.

i've never encountered any problems like that with my emerald crabs, besides being scavengers they don't harm anything. my clowns even let them get very close to the anemone, which is a surprise because normally anything that gets close, including me, gets shooed off, nipped, or flipped over and bumped until they're a safe distance away.
