Setting up a 75 gal. what am I missing?

Your skimmer is way too small for your size tank. You'll want a better model.
Your sump - even through pre-built, is way too expensive for the job that it does.
Your heater is way too cheap and you will want to upgrade asap. Jager makes good heaters. Titanium heaters are also good.
You don't need the kents essentials mix if you are doing a fish only tank.
Your stock list needs a lot of work. For example, a picasso trigger needs a much larger tank. The moray eel needs a much larger tank as well. The scorp and the clownfish is not a good idea. Hamlets get huge - and so will the hogfish.
You'd be better off going with a DIY 20g long sump, a jager heater, a reef octopus skimmer, and some more research in fish.

Oh, and since I assume you are wanting a fish only tank, according to your species of fish that you have picked out,... your T5 unit is way overkill - you should go for a 2 bulb unit for half the cost. Unless you really do want a soft coral reef, I highly suggest changing your stock list and keeping your lighting.
Also, to save you a little money, look into retrofitting your T5 lights instead of paying for a unit - unless you don't want a canopy and like the look of a fixture more.
