Sharks.

Just curious, what kind of shark can be kept in a pool that is 8 feet long, 7 feet wide, and 2 feet deep(about 840 gallons) and that will be fine in very cold temps like 50F-65F comfortably?

Would the temps be a constant 50°-65°, or we talking like those temps in the winter, and then into the 80°'s-90°'s in the summer?

If you can keep the temps closer to 65°, Port Jackson's and Japanese Horn Sharks would be great (actually my favorite out of the commonly available sharks). I don't think they'd do well down into 50°'s, but in the mid 60's will work for them.
Those are about the only ones off the top of my head that are cooler water that you'll probably find for sale. There are a couple sharks that would work as well in cold temps, something like Chain Dogfish comes to mind, but I have no idea if you'll ever be able to get one.

I was gonna say Chain dogfish. We talked about them before aqua. The horn sharks would be great as not to many people have them.

Which 'leopard shark?' Triakis semifasciata would be good, Stegostoma fasciatum get way too big.

Ok, so, what size shark can be kept in a pool that is 8' long x 7' wide x 2-2.5' high? Horn sharks(Heterodontus francisci) get almost 4 feet long, will it be fine in that sized pool? There are also some coldwater sharks that get about 3 feet or so long like Swellshark(Cephaloscyllium ventriosum) and Small-spotted Catshark(Scyliorhinus canicula) and Brown Smoothhound(Mustelus henlei) and Grey Smoothhound(Mustelus californica).

Triakis semifasciata get 6 feet long, not sure it would be fine in a 8'x7'x2-2.5' pool...

Difficult to say, about the tank mates...especially since most sharks feed on flounder and other small, bottom dwelling fish. I also would not risk a scirmish, between a shark and a ray...they'll compete for food and the sharks will most likely take a swipe at a ray.
Port Jacksons and Horns have already been mentioned. Leopards, to my knowledge, are still illegal (under a certain length) and reach lengths of 6'+.
Other than already mentioned, there aren't really too many (that are available in the hobby) that come to mind.
In a tank, the size you're talking about, I'd get a pair of Ports and a pair of Horns. They'd thrive in the size habitat you're thinking about and both reproduce quite easily, in captivity.

So I'll be able to keep 4 sharks (2 Hornsharks and 2 Port Jackson's equaling 2 pairs total) in a 8'x7'x30 inch (about 1,040 gallons) pool for life?
