Size of shrimp for cycle?

I am yet setting up a 3rd tank. The 6 gallon ecplise is a piece of junk because it cracked at the bottom and is currently leaking. So I bought a 12 gallon nano cube dx. Much much better than those eclipse tanks. I've never cycled with a shrimp before. I've heard of using a large shrimp but since this is such a small tank, should I go with a smaller one or does the size not matter? I'm going to buy live sand, live rock and use the water from my 100 gallon. After all that's in place, then do I put the shrimp in? Then do I take it out when the ammonia drops to zero or the nitrites drop to zero?

If you plan to remove the shrimp then you can go a head and use a large one then just remove it when the ammonia spikes.
