The non reef safe species, such as chocolate chips, bahama, general and red africans...for example...would, though shrimp are somewhat less common meals than a snail would be. For brittlestars and serpenstars (which are the same animal), they may or may not eat snails and shrimp. Reef safe stars like Linckia are not likely to, unless the snail is dead or dying. However, these stars are very specialized, and all need very specific tank conditions. No star should be kept in a tank less than 6 months old, at least, IMO. Reef safe stars like Linckia really do not do well in tanks under 55g, as an example, and this is only for some of the 'toughest' of these stars. So there is a lot of reading and research to do down the road to find the star best suited for the system you end up with.
