starting another tank?

I am changing my 30gal hex over to saltwater and want to make sure I am doing it right. I added my water and salt the first day and when it cleared up good I added my substrate, CC, about 2 days later. Then I added some lr and water out my 125gal yesterday, which is about a week later. Now what do I do? So far, this is how my lfs told me to do it. He says I should be able to add fish now but I am really worried about doing so.

You need to test the water for ammonia, nitrites and nitrates. After the ammonia and nitrite levels spike then drop back down to zero you are ready to add fish. Will probably take around four weeks. If you add fish before then it will not be safe for them. A suggestion I would make is to swap out the crushed coral for live sand. Crushed coral can harbor nitrates and isn't as easy to keep clean. Could cause you problems down the road.
