Switching Tanks

I bought a 150 and have an empty 75 laying around. I have my eels 40g breeder. I want to move everything over. I used all new sand in my 150. I rinsed it out 100% and mixed in maybe 5 pounds of my old sand. I freaked out people saying dont move your sand around it can cause this and that.
Well I dont wanna do that again. I have read many people just moving over everything. I want to just move my sand and rock over and move the fish over and call it a tank.

You're not. Im an idiot. How does one switch tanks fully without causing any issues with ammonia or messing up the balance in the sand?
