I did this last year, what I did was scoop my CC out with a slotted spoon. I then shut my filters off and put in the live sand. Once it settled a bit I turned on the filters and by morning it was nice and clear. I did not really notice much of a re-cycle as I left everything alone except for removing the CC.
My live rock and mushrooms had sand all over them so I used my turkey baster and blew the sand off of them.
This is what worked for me. Love the sand and would never go back to cc again.

when i upgraded to my big tank recently, i used my old sand, but i had to add about 40 pounds of brandnew live sand. i didn't notice a difference at all in my water parameters.

Since all you have it live rock, then yes I would remove it first just to make life easier!
Place it in a tub of some sort with water from your tank and a power head (a new clean trash can works well).
Once all the CC is removed, put the rock back in the tank THEN add your new sand around the base of the rocks. That way the rock is sitting on the tank bottom (more secure).
