how much salt per gallon of water is the norm and what should the salt level be between

I cant speak for all brands of salt, but coralife is 1/2 cup per gallon. For my reef tank, i keep my salt at 1.023-1.024.

That's about right for Instant Ocean too. We use a full measuring cup (approx 2 1/2 cups) for the large tub that the salt comes in. We have ours at 1.025 (5 gallon). Keep in mind after it sits for a while (hr or so), the salinity changes (don't take immediate reading after mixing for absolute)
